Ingredients: 1 1/4 cup boiling water 1 cup quick oatmeal 8 T butter ( one stick) 1 cup brown sugar 1 cup white sugar 2 eggs 1 1/3 cup flour 1 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 1/2 tsp nutmeg
For the Frosting:
8 T butter ( one stick) 1 tsp vanilla 2 cups brown sugar 1/4 cup evaporated milk ( carnation) 2 cups sweetened shredded coconut

Directions: |
Directions:Pour the boiling water over the oats in a mixing bowl. Add the stick of butter. Cover with plastic wrap and let stand 20 minutes. Uncover and add the brown sugar and the white sugar and 2 eggs. Beat until creamy.. Add the flour, baking soda, salt, cinnamon and nutmeg. Mix until well blended. Pour into a greased 9"x13" pan. Bake at 350 for 35 minutes or until a toothpick inserted comes out clean.
For the topping melt the butter. Add the rest of the ingredients and spread on top of hot cake. Place under a broiler and broil 3-5 minutes or until lightly browned. Watch carefully, scorches easily. |
