1 1/2 c sugar
1/2 c shortening
2 eggs
2 1/2 c enriched all-purpose flour
1 tsp salt
3 Tbsp unsweetened cocoa powder
1 c buttermilk
1 tsp vanilla
1 tsp butter flavoring
1 oz red food coloring
1 tsp baking soda dissolved in 1 Tbsp vinegar

Frosting:
1/2 c all-purpose flour
1/4 tsp salt
1 c milk
1 c butter
1 c sugar
2 tsp vanilla
1 cup flaked coconut or nuts, optional

Cake:
Preheat oven to 350º. Grease and lightly flour 3 8” or 9” round layer cake pans.
In a lg mixing bowl, cream sugar and shortening until fluffy; add eggs, one at a time and beat well. In another bowl sift flour three times with salt and cocoa. Add flour mix alternately with buttermilk to creamed mix. Stir in vanilla and food coloring. Fold in soda mix but do not beat. Pour into prepared pans and bake 20-25 minutes or until cake tests done. Cool briefly and then turn out on rack. Cool completely and frost.

Frosting:
In. Lg saucepan, mix flour with salt and milk until blended. Cook slowly over low heat until very thick. Cool thoroughly. In a lg. bowl, cream butter and sugar until fluffy. Add butter mix to milk mix and beat until it looks like whip cream. Add vanilla, stir in. Spread on cooled cake and garnish with coconut and/ or nuts as desired.
