3/4 lb Angel Hair Pasta
Olive Oil
1 lb boneless skinless chicken breast
1/2 tsp dried oregano
salt
pepper
4 tbsp. butter
2 cups chopped tomato
4 thinly sliced green onions
3 minced garlic cloves
1 tbsp. Cajun seasoning
1/2 tsp paprika
2/3 cup heavy cream
1/2 cup grated parmesan cheese
2 tab lemon juice

Cook Pasta according to instructions
In skillet, over med-high heat, heat 1 tab oil. Season chicken with oregano, salt and pepper. Add to pan.
Cook until golden brown on both sides and no longer pink I middle, about 8 min per side.
Remove from pan, cool for 10 minutes, then dice chicken.
Stir in butter, melt in chicken pan. Add tomatoes, onions, garlic, Cajun, and paprika.
Cook stir often, until tomatoes start to burst about 2 minutes.
Stir in heavy cream, parmesan, and lemon juice. Simmer until sauce thickens, about 5 minutes. Season to taste, salt and pepper.
Turn off heat, add chicken. Toss to coat. Add pasta, toss.
Top with parmesan and more Cajun seasoning.
