˝ pound frozen spinach, thawed and drained​​
1 1/3 cups milk
1 [8oz] package feta cheese, crumbled or cubed​
​2 cups flour
2 eggs, beaten​​​​​​
2 teaspoons baking POWDER
1/3 cup olive oil
​​​​​​1 teaspoon salt

1. Preheat oven to 350 degrees. Line muffin tin with cups or grease with cooking spray—I used the silver cups as muffins/cupcakes always come out easier
2. Place thawed spinach into a dish towel/or paper towels and squeeze out excess water
3. Cute feta cheese into cubes or crumbles
4. Mix flour, baking POWDER, and salt in a bowl
5. In a separate bowl, combine eggs, milk, oil and spinach. Gently mix in feta cheese.
6. Slowly add dry ingredients to wet
7. Divide batter evenly into cups [I use large ice cream scoop]
8. Bake for 18-20 minutes.
9. Cool slightly before removing muffins from muffin pan. Serve warm.

These are good reheated for just a few seconds.
