Directions:
Line a 10” Dutch oven with foil. Combine the beef, sausage, salt, eggs, onion, celery and bread crumbs in a large bow and mix well with hands until combined. Form the mixture into a square loaf inside the lined pot. Lay bacon over loaf and cover pot with lid. Set the Dutch oven on a ring of 8 hot coals and place about 14 coals on the lid. Cook 1¼ to 1½ hours or until meat is cooked through (internal temperature should be 160º). Rotate pot and lid every 15 minutes and replenish coals as needed to maintain heat. After 1 hour of cooking, add a few hot coals to the center of lid to brown bacon. Drain off grease before serving. Serves 10 to 12.
