½ c. granulated sugar
1 tsp salt
6½ c. bread flour
½ c. butter, softened
3 lg. eggs, separated
½ c. unseasoned mashed potatoes
2 pkgs active dry yeast
2 c. milk, scalded and cooled
1 tsp. ground nutmeg

Glaze:
3 TB water
1 c. powdered sugar

Doughnuts:
In a large bowl, sift together the sugar, salt and flour. Blend the butter into the dry ingredients. Combine the eggs yolks with the potatoes. Add to the dry ingredients. Add the yeast to the cooled milk. Gradually blend into the flour mixture. Let rise for 40 minutes. Roll the dough 3/8” thick. Cut the dough into 4” rounds, a juice glass works great. Repeat until you've used all the dough. Let the doughnuts rise again on a baking sheet, about 45 minutes. Heat lard or vegetable oil in a deep pan to a depth of 2 to 3 inches until very hot. Fry the doughnuts in batches until golden, about 30 seconds on each side.

Glaze:
Mix together the water and sugar. Dip the doughnuts into the mixture. Makes 2 dozen doughnuts.
