Ingredients: - 4 large sweet potatoes - 1 chia egg (or regular egg if not vegan) - 1 1/4 cup of oat flour, fine corn meal (masa works too), or whole wheat flour - 1/4 cup chickpea flour, coconut flour, or almond meal (can be subbed for 1/2 cup of the above) - 2 tbsp. olive oil - 1 tbsp. apple cider vinegar - 1 - 2 tsp corn meal - salt, pepper, and additional spices per your topping of choice - sauce and toppings

Directions:1) boil or steam and mash sweet potatoes 2) preheat oven to 400 F 3) combine all other ingredients (except toppings) with mashed sweet potatoes, it will be a sort of tacky quick bread dough - if it is not add more oil as needed 4) line a a vented pizza pan lined with parchment, a cookie sheet lined with foil works as well - sprinkle with corn meal note: if using foil, i recommend oiling it just to prevent sticking 5) dump dough onto pan and press until it fills the shape or is about 1/2 inch thick 6) bake from 15 minutes, check, and then bake for additional time as needed - the time will vary based on the size of your pan, the power of your oven, and the thickness of the dough so just be mindful 7) once golden around the edges remove from oven and allow to cool for 10 minutes 8) add sauce and toppings to crust and bake for 7 to 10 minutes 9) remove from oven and enjoy! |

Notes: This is a lovely gluten free option that is also packed with a bunch of other nutrients and fiber from the sweet potato! Fun fact: sweet potatoes and white potatoes are about equal where nutritional value is concerned. So maybe you could try it with either? Potato pizza crust sounds like a dream. Dreaming of a breakfast pizza made with the aformentioned potato crust, with gravy and vegan sausage and red peppers and spinach. YUM! Some other toping options I recomend are barbeque jackfruit with onion and pineapple, or buffalo cauliflower with vegan ranch and roasted chickpeas. Of course you can never go wrong with pesto with Mediterranean veggies or a classic red sauce. The options are boundless! And in truth the sweet potato could likely be subbed for a variety of veggies, so have fun and get creative with this one!
