3 tablespoons butter
1 cup small diced onion
1/2 teaspoon dried thyme
1/4 cup flour
1 cup heavy cream
1 cup chicken stock
4 cups shredded extra sharp cheddar cheese (divided)
2 teaspoons salt
1/4 teaspoon pepper
8 russet potatoes (4 pounds), peeled and thinly sliced

Directions:
Directions:
Saute onions and thyme in butter. Add flour and cook 1-2 minutes. Add cream and chicken stock, stir until the sauce has thickened and is just about to simmer. Add 3 cups of the cheese and stir until melted. Removed from heat; stir in salt and pepper.

Put potatoes in a large bowl and pour cheese sauce over the potatoes. Toss until well coated. Layer potatoes in a slow cooker. Cook on high 5 hours. When finished, add remaining cheese. Melt cheese on warm setting. Let potatoes rest 15 minutes before serving.
