1/2 cup sesame oil
1/2 cup soy sauce
1/4 cup minced fresh ginger
2 pounds chicken breasts pounded thin or chicken cutlets
Vegetable oil
1 cup chicken broth
1/2 cup butter, melted
4 teaspoons dry mustard, made into a paste with water

Directions:

Marinate chicken in a mixture of sesame oil, soy sauce, and 2 teaspoons of the ginger for 1-3 hours.

Fry chicken for 1 minute on each side in a small amount of vegetable oil. Drain on paper towels. Wipe out skillet.

Combine broth, butter, remaining ginger, and dry mustard paste in the skillet. Add chicken, cover and cook slowly for 30 minutes.

Serve chicken with rice, snow peas, and the sauce.
