12 egg whites (1 ½ cups)
3/4 C. granulated sugar
1 ½ tsp. cream of tartar
1 ½ tsp. vanilla
1/2 tsp. almond extract
1 C. cake flour
1¼ C. confectioners sugar
1/4 t. salt

Directions:
Directions:
Sift flour, confectioners sugar and salt together 3 times - set aside.
Beat egg whites and cream of tartar until foamy. Add granulated sugar 1/2 C. at a time. Beating well. Add vanilla and almond beating well. Fold in flour mixture 1/2 C. at a time until flour disappears. Continue until flour is all used up. Turn into 10-inch tube pan. Gently cut through batter with metal spatula. Bake 350º oven 30-48 minutes.
