Vegetable Oil
1 ⅓ C. milk
1 ½ C. Self-rising flour
2 eggs
1/4 C. granulated sugar
Confectioners sugar

Directions:
Heat oil 2 inches deep to 375º in 3 qt. sauce pan or heavy skillet.
Beat ingredients except confectioners sugar until smooth. Holding finger over funnel tip (1/2 in. in diameter), pour about 1/2 C. into funnel. Drip batter into hot oil. Swirl in circles from center out.
Fry light brown and turn to fry other side brown. Drain and keep warm. Sprinkle confectioners sugar. Do not keep tightly covered or cakes get soggy.
