PIE:
2 C. Whole Milk
3/4 C. Sugar
1/4 C. Flour
Pinch of Salt
3 Egg Yolks (reserve whites for Meringue)
2 tsp. Vanilla
2 T. Butter
Variations: Add the ingredients for the desired pie.
Coconut Pie - 1 C. Coconut
Banana Pie - Sliced Bananas (2-3)
Chocolate - 2 T. Cocoa
1 Pie Crust
MERINGUE:
4 T. Sugar, 1 T. Corn Starch, 1/2 C. Water, 3 Egg Whites (from reserve above), 1/8 tsp. Salt, and a Splash of Vanilla

PIE:
In microwaveable bowl, mix flour, sugar and salt. Add milk and egg yolks. Microwave for 3 minutes on high, then stir mixture. Microwave another 3 minutes, stir and check for thickening. Microwave another 1-2 minutes. The mixture thickens quickly and time varies with each microwave. After the mixture thickens to pie consistency, add butter and vanilla. Cool to room temperature before pouring into pie shell that has already been baked. Ensure you pricked the pie crust before you baked.
For COCONUT PIE add 1 C. Coconut to mixture after microwaving.
For BANANA PIE add sliced Bananas after mixture has cooled.
For CHOCOLATE PIE add 2 T. Cocoa before microwaving.

MERINGUE:
In microwaveable bowl, add 2 T. sugar, 1 T. corn starch and 1/2 C. water and stir well. Microwave for approximately 3 minutes or until syrupy. Cool mixture. Beat 3 egg whites and 1/8 tsp. salt till stiff peaks form. Add a splash of vanilla and 2 T. sugar to egg whites and mix in, then add the cooled microwaved mixture and mix well. Add to top of fie filling and brown in a 350º oven till browned on top, approximately 15 minutes. If you made coconut pie, you can sprinkle coconut on top of the meringue before baking.
