5 eggs
1 (16 oz) cottage cheese, divided
1 tsp salt
3 1/2 - 4 cups flour
1 T vegetable oil
5 potatoes, diced (optional)
2 cups chicken broth
2 T butter
1 pint heavy whipping cream
1 (8 oz) sour cream
3 T chicken base
2 cups ham or sausage, diced (optional)
bread crumbs (optional)

Directions:
Directions:
Beat eggs, add half cottage cheese, salt and flour to make stiff dough. Let rest.
Bring kettle of water with vegetable oil to boil, Add potatoes (optional) and boil 10 minutes. Cut dough (small pieces) into water. Cook until knoephlas float. Drain and put in roaster. Add ham or sausage.

Mix chicken broth, butter, cream, sour cream, chicken base and remaining cottage cheese. Pour over knoephla. Cover and bake at 350º F for 45 minutes. Sprinkle bread crumbs browned in butter (optional). Bake uncovered for 30 additional minutes.
