Can of Tomatoes, size depends on the crowd you are serving
Enough large eggs to feed the crowd

Open the can and pour it in the pan. Size of the pan depends on the crowd.
Bring to a boil.

Crack eggs into boiling tomatoes. Wait until cooked the way you like them and then serve over biscuits or rice or toast.

This simple recipe can have as many variations as you like. Add other vegetables like peppers, kidney beans, or corn. Add bacon or sausage if you wish. Season it Italian or Mexican or whatever. Use seasoned tomatoes or diced tomatoes or fresh tomatoes. You get the idea.

Paul gave us this recipe. I assume it is Dutch. We like it best over whole wheat biscuits. We seldom season it. But we always like it.
