3 eggs, separated
2 tsp. sugar
1 ½ tsp. salt
2 c. buttermilk
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 apple, cored, peeled & chopped

Caramel Syrup:
½ c. buttermilk
1 c. sugar
½ c. butter
½ tsp. baking soda
1 tsp. vanilla

Directions:
Directions:
Abelskiver pan should be heated on medium for cooking about half way through making dough.

Beat egg yolks, then add sugar, salt, and milk.
Sift together flour, soda, and baking powder, then add to the sugar mixture.
Fold in chopped apple.
Stiffly beat egg whites into peaks and fold in.

Place a small amount of oil (1/4 tsp or so) in each abelskiver cup, then fill 2/3 with dough.
Cook until brown underneath, then turn with a knitting needle, nut pick, toothpick, or similar object until brown.

Caramel Sauce:
In a large saucepan, combine buttermilk, sugar, & butter.
Bring to a boil over medium heat.
Add soda & vanilla.
Cook over medium heat until syrup is a medium butterscotch color - it will thicken as it cools.

You need an abelskiver pan (spelled a few different ways).
My favorite now is a nonstick one! It makes the process MUCH more enjoyable.
