1 ½ cup cooked chicken (6 ounces of tuna may be substituted)
1 cup cooked rice
½ can condensed cream of mushroom soup
½ cup chopped celery
½ can water chestnuts, sliced
½ cup mayonnaise
1 hard boiled egg, chopped
1 can mushroom

TOPPING:
Cornflake crumbs
Shredded sharp cheddar cheese

Directions:
Directions:
Mix ingredients for casserole and place in a greased oven-proof casserole dish.

Combine topping ingredients and sprinkle over casserole.

Bake at 350º for 30 minutes.

In later years, Grandma moved into a senior citizens complex. She would invite us for lunch and fix this casserole. After lunch, I would always do the dishes for her. She complained she didn't want me to do that because she wanted to spend time with me. One day we came and were served lunch on paper plates. No dishes to wash. Problem of the visit solved.
