3 Eggs
2 C sugar
1 C. oil
1 tsp vanilla
2 C shredded zucchini
2 C self-rising flour
1-1/2 tsp. Cinnamon
1 C. nuts, pecans or walnuts

Directions:
Directions:
Beat the 3 eggs until frothy. Gradually beat in 2 C. sugar, 1 C. oil, and 1 tsp. vanilla. Beat until thick and lemony. Stir in 2 C. shredded zucchini. Stir in 2 C. self-rising flour and 1-1/2 tsp cinnamon. Fold in 1 C. chopped nuts.

Pour into 2 greased loaf pans.

Bake for 1 hour @ 350º
