1 medium onion
1/2 cup margarine
2 tablespoons flour
1 cup milk
10 ounce package frozen chopped spinach
1 cup sour cream
2 eggs
1/4 teaspoon salt
1 8 1/2 oz package Ballard corn bread mix
2 tablespoons sugar
1/2 cup shredded sharp cheddar cheese

Directions:
Directions:
Cook spinach and drain well. Saute onion in margarine and add flour, then milk to make a cream sauce. Add remaining ingredients except cheese. Bake in a 1 1/2 quart casserole dish at 350 until center is done, about 30 to 35 minutes. Sprinkle cheese on top and bake an additional 2 minutes.
