2 cups peeled and diced apples
1 cup sugar
1 egg
1 tsp cinnamon
1 cup flour
1 tsp baking soda
½ tsp salt
½ cup chopped nuts - optional

Directions:
Directions:
Preheat oven to 375º.

Mix apples with sugar and let stand 5 to 10 minutes. Add slightly beaten egg. Add dry ingredients and mix well. Pour into a greased 8-inch square pan.

Bake 35-40 minutes or until a toothpick stuck in the center comes out clean.

Jim used to go to the park and gig frogs. He would clean the legs and Grandma would fry them up for Jim and Grandpa (as Mom wanted nothing to do with them). One particular time, Jim had forgotten to cut the tendons before he put them in the fridge. Grandma dropped the cold legs into the hot oil, which caused the legs to contract and jump out of the skillet. Yup, Grandma jumped out of the kitchen, too.
