2 eggs
⅔ cup oil
1 Tbl vanilla
1 tsp lemon rind
2 tsp baking powder
¾ cup sugar
2 cups flour
dash of salt

Directions:
Directions:
Preheat oven to 400º.

Beat eggs with a fork until well blended. Stir in oil, vanilla and lemon rind. Blend until mixture thickens.
Add baking powder, sugar, flour and salt. Blend well.

Drop by teaspoonfuls onto ungreased cookie sheets. Flatten with the greased bottom of a glass dipped in sugar.

Bake 8 - 10 minutes until delicate brown. Cool on a rack.
