Canola oil
1 pound lean ground beef (or ground turkey)
1 onion coarsely chopped
1 cup sliced celery
1 medium potato, cubed
1 (15oz) can chopped tomatoes
2 tsp beef bouillon powder, dissolved in 2 cups of water
1/2 tsp kosher salt
1 tsp fresh ground pepper
1 tsp chili powder
1 (16oz) can red kidney beans - drained
2 cups thinly shredded cabbage

Directions:
Directions:
Add canola oil to a Dutch oven and brown the ground beef, until brown and crumbly.
Add the onion and the celery and sauté for five minutes.
Stir in the tomatoes, potatoes, water, bouillon, salt, chili powder and pepper.
Cover and simmer until the potatoes are tender.
Bring to a boil and add the cabbage and the beans.
Reduce the heat, cover and cook until the cabbage is tender - about 3 minutes.

This soup is thick, like a chili. If you want a thinner soup, add chicken stock.
