1 medium onion cut into crescent moons
1.5 lb boneless chicken (breast or thigh) cut into chunks
4 large carrots cut into thick slices
2 roma tomatoes, diced
1 an coconut milk
1 Tbsp mild curry powder
2 tsp salt
1 c peas or chopped kale
chopped cilantro

Directions:
Directions:
- Place onions in slow cooker or dutch oven with chicken on top, then add remaining ingredients except for cilantro & peas.
- In a slow cooker, cook for 4 hours on high or 8 hours on low. In the oven, cook for 3 hours at 300º F.
- Stir in peas and cook for a minute at the end, then serve on rice garnished with cilantro.

This is a very mild curry that could be made spicier if you like. To make it Joy-friendly, swap out the onions for leeks.
