Ingredients: 18 eggs 2 lemons 8 Tablespoons Lemon Juice 1/4 teaspoon cream of tartar 3.5 Cups Sugar 1 carton whipping cream

Directions:Beat 6 egg whites until frothy. Add 1/4 teaspoon cream of tartar and beat until stiff to hold a point. Add 1.5 cups sugar gradually and beat til stiff and glossy. Spread in 2 well greased and floured pie pans. Bake for 45 mins at 200 degrees. Remove from oven and let cool.
Lemon Custard: Beat 16 egg yolks til lemon colored (lemon colored is Grandma's instructions. I just beat it awhile). Beat in 2 cups sugar gradually. Blend in 8 Tablespoons lemon juice. Add lemon rind while cooking. Cook in microwave stirring frequently. Cook until thick, it turns a real bright yellow. Let cool.
Whip cream and leave unsweetened. Spread a layer of whipped cream over bottom of cooled shells. Spread lemon filling over whipped cream and top with another layer of whipped cream. Chill several hours. |
