Ingredients: Ingredients to freeze together: 3 cups chopped sweet potatoes, fresh or frozen 1-2 jalapeños**, minced half of an onion, chopped 4 cloves garlic, minced 1 teaspoon curry powder 1 teaspoon turmeric 1 teaspoon salt 1 14-ounce can fire roasted tomatoes 1 14-ounce can coconut milk
Ingredients to add later: 1/4 cup peanut butter 1/2 cup chopped peanuts 1-2 cups kale, chopped 1-4 cups water (depending on cooking method)

Directions:1. Freeze together ingredients listed under "ingredients to freeze together." The ideal container is a 7-cup round glass pyrex container with a lid. Another option is a gallon ziploc bag. Label and freeze.
2. When you want to cook this stew, run warm water over the outside of the frozen container until the contents release. Place contents inside an instant pot, crock pot, or pot on the stove.
INSTANT POT: 3. Add about 1 cup water with frozen ingredients. Cook on "high pressure" for 8 minutes. (The instant pot will take about 20 minutes to come to pressure and then the 8 minute timer will begin.) Once time is up, add around 1 cup more water (to desired thickness), peanut butter, kale, and peanuts. Let sit for 5 minutes (on "sauté", if necessary) or until kale is wilted and soup is heated through. Serve.
CROCKPOT: 3. Add 1 cup of water with frozen contents. Cook from frozen for 5-6 hours on high. Once time is up, add 1-2 cups additional water, as desired, along with kale, peanuts, and peanut butter. Let sit for 5-10 minutes until kale is wilted and soup is heated through. Serve.
STOVE TOP: 3. Add frozen contents to pot with 2 cups water. Slowly thaw and simmer until sweet potatoes are cooked through, adding more water as necessary. After potatoes are done, add more water to reach desired consistency along with kale, peanut butter, and peanuts. Simmer for a few more minutes until kale is wilted and soup is heated through.
NOTE: You can also cook this recipe without freezing ingredients first. Times will decrease. |

Notes: This is a really delicious and easy freezer recipe. Usually the easiest freezer recipes seem to be pretty bland, but not this one! A great find. Note: This only makes about enough for 4-5 people, so if you need more, you may want to adjust amounts.
