1/2 stick butter
3/4 cup finely chopped yellow onion
1 large garlic clove, finely chopped
1 lb package chicken livers, patted dry
1/4 cup cognac
1/4 tsp ground nutmeg
Pinch ground allspice
Salt and black pepper to taste

Directions:
Directions:
Melt butter in medium skillet over moderate heat.
Add onion and garlic and stir until translucent; 6-8 minutes. Stir often.
Add chicken livers to skillet and stir until almost cooked through; about 10 minutes.
Add cognac to skillet and simmer until almost evaporated.
Transfer to food processor with metal blade, add spices and puree until smooth.
Season to taste with salt and black pepper.
Pour into bowl, cover with plastic wrap and refrigerate for at least 6 hours.
Can keep in refrigerator for up to 3 days.
