3 cups rolled oats
2 cups pecans, chopped
3/4 cup shredded coconut
1/4 cup plus 2 Tbsp dark brown sugar
1/4 cup plus 2 Tbsp maple syrup
1/4 cup coconut oil
2 Tbsp warm water
3/4 tsp salt

Directions:
Directions:
Preheat oven to 325º.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, water, oil, and salt. Combine both mixtures and pour onto a lined sheet pan. Cook for around 45-55 minutes, stirring every 20 minutes to achieve an even color.
Bake until the granola is a golden brown all over.
Remove from oven and leave to cool completely. Transfer to an airtight container for up to 2 months.
