1 acorn squash
1/2 Tbsp oil
1/2 onion, diced
1 celery stalk, diced
4 ounces turkey breakfast sausage
1/4 tsp salt
1/4 tsp pepper
1/2 tsp rosemary
2 cloves garlic, minced
1/2 apple, diced
1/2 cup breadcrumbs
1/4 cup grated parmesan cheese

Directions:
Directions:
Preheat oven to 400º.
Trim ends of squash and cut in half. Remove seed, place on baking sheet. Drizzle with oil, sprinkle with salt and pepper.
Roast for 40 minutes.
While squash roasts, sauté onion, celery, garlic, salt, pepper, and rosemary.
Add sausage, stirring to crumble.
Add apple, breadcrumbs, and parmesan. Cook until apple is just softened. Remove from heat.
Divide filling into each half of squash. Sprinkle with parmesan.
Roast for 20 minutes longer.
Let set for 5 minutes, serve.
