6 eggs - separated
1 ½ C. sugar
3/4 C. lemon juice
Rind of 2 lemons, grated
1 ½ T. unflavored gelatin
1/2 C. Cold water
1 large or 2 small angel food cakes
1 C. Whipping cream

Directions:
Directions:
Beat yolks add 3/4 C, sugar, Add juice and lemon rind. Cook in double boiler until coats back of spoon. Stirring constantly.
Soak gelatin in cold water and pour into egg yolks while hot. Beat whites stiff - add 3/4 C. sugar. Fold yolk mixture into whites. Break cake into pieces, size of plumb and put into large bowl. Pour mixture over cake with 2 wooden spoons, keep turning to coat well. Try not to mash cake. Butter tube pan and put cake in, shaking to be sure there are no air holes. Cover, put in fridge for several hours. Turn out cake. Ice with whipped cream.
