Ingredients: Make a Sponge by mixing together in a measuring cup: ½ cup warm whole milk (105-110º) 6 ¾ t dry yeast 1 T sugar sprinkle of ground ginger
Mix together: 2 sticks softened butter 5 T sugar 5 large eggs 1 cup sour cream (full fat) 1 T vanilla 7 cups flour (add in slowly)

Directions:Add sponge to flour mixture and mix. Turn onto a floured counter and knead until the dough leaves your hand. Measure into 7oz. balls. Cover and let rise for 20 minutes. Line 4 cookie sheets with parchment paper ( 2 Kolache will go on each sheet). Roll a dough ball on the floured counter until it is a 12" x 14" rectangle. The rectangle should be 14" wide by 12" tall. Place 1 cup of filling on the dough spreading all the way to the edge closest to you and leaving ½" on the right and left side and 3" at the top bare. Roll up tightly and push in the ends. Place seam side down on a cookie sheet and cover with a towel. Let rise for 1 hour. Brush with egg was and pierce with a fork 5-6 times all the way through to the cookie sheet. Bake in a 350º oven for 30-37 minutes.
Egg Wash: Mix 1 egg with a little milk and brush over tops with a pastry brush
Nut Filling: 3 lb walnuts ground fine in a food processor 3 cups sugar 1 T vanilla 1 ½ sticks melted butter 1-1½ cups whole milk
Apricot Filling: Buy prepared filling mix at Rullis Note: Sprinkle rice krispies on filling before rolling up (it absorbs moisture)
Nut/Apricot Combo: Spread 1 cup nuts on dough and top with ½ cup apricot filling. You do not need to sprinkle with rice krispies
Poppyseed: Buy prepared poppyseed filling at Rullis and add a little honey and melted butter |
