SALAD:
Head of Napa cabbage, chopped
2 packages of chicken flavored Ramen noodles (just the noodles, uncooked)
4 chicken breasts, cooked and shredded
1/3 cup sliced almonds
1 can mandarin oranges, drained

DRESSING:
1 cup olive oil
6 Tbsp balsamic or red wine vinegar
4 Tbsp sugar
1 tsp salt
1/2 tsp ground pepper
1 seasoning packet from Ramen noodles

Directions:

1. In large salad bowl, layer cabbage, shredded chicken breast, mandarin orange slices, dry, broken ramen noodles, and almond slices.
2. Combine ingredients for dressing and mix very well. Serve on the side.

Another wonderful, day and crowd-pleasing recipe for Pot luck dinners. Aunt Crystal passed this recipe on to me many years ago, and I always think of her when we eat it. Fantastic summer salad!
