SALAD:
1 medium head of iceberg lettuce, chopped
1/2 cup sweet onion, chopped
1/2 cup frozen peas, cooked and cooled
1/2 cup green bell pepper, chopped
1/2 cup celery, sliced

DRESSING:
1 cup sour cream
1 cup mayonnaise
1 Tbsp lemon juice
1 Tbsp vinegar

TOPPINGS:
8 slices bacon, fried and crumbled
1 cup chopped tomato
1 cup grated cheddar cheese

Directions:
Directions:
1. In 9x13" casserole dish, place lettuce in bottom of dish. Cover with layers of other chopped veggies.
2. Mix sour cream, mayonnaise, lemon juice and vinegar. Spread over top of salad, sealing edges with dressing.
3. Top with grated cheese and refrigerate overnight.
4. Top with bacon and tomatoes just before serving.

This is a great salad for pot luck dinner or if planning a large gathering, as it can be prepared the night before. Very light and fresh- wonderful on hot summer days.
