1 T vegetable oil
1 onion- chopped fine
2 minced garlic cloves
½ t dried thyme
½ cup ketchup
¼ cup packed brown sugar
4 t cider vinegar
2 eggs
½ cup milk (plus extra if needed)
2 t dijon mustard
2 t Worcestershire
1 t salt
½ t pepper
¼ t tabasco
1 lb ground beef
1 lb ground pork
⅔ cup plain dried breadcrumbs
⅓ cup minced fresh parsley

Directions:
Directions:
Preheat the oven to 350º and adjust a rack to be in the middle. Heat the oil in a skillet. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and thyme and cook until fragrant. Set aside to cool.
Mix together the ketchup, brown sugar and vinegar. Set aside. In a large bowl, mix together ground meat, breadcrumbs, parsley, sauteed onion mixture, eggs, milk, mustard, worcestershire, salt, pepper and tabasco.

Put meatloaf onto a foil-lined cookie sheet and shape into 9 x 5 loaf. Brush with half of the ketchup mixture. Bake for 45 minutes. Brush with the remaining mixture and bake for an additional 30 minutes. Let cool for 20 minutes before serving.

Note: I usually double this and freeze the leftovers in dinner sized portions.
