"As viscous as motor oil swirled in a swamp, redolent of burnt bell peppers nested in by incontinent mice and a finish reminiscent of the dregs of a stale can of Coca-Cola that someone has been using as an ashtray. Not a bad drink, though."--Excerpt from "The Moose Turd Wine Tasting" by T. A. Nonymous

2 cups chopped hot peppers (9 jalapenos) I use jalapenos
2 cups chopped onions (1 LaRew's for ge onion)
3 tsp. canning salt
4 cloves garlic minced (I usually use a bit more)
1 1/2 cups cider vinegar
1 medium can tomato paste

Directions:
Directions:
Combine all (except paste) in a large saucepan, bring to a boil, reduce heat, simmer 20-30 minutes till thick. (add tomato paste, simmer 15 minutes) Pour hot into HOT JARS, wipe access around rim and seal. process in boiling water 30 minutes turn upside down and cool.

*if you like it hot, add more hot peppers w/seeds up to approx. 2 cups more...

**this makes about 7 pint jars so I usually double the recipe and most of my chopping is done in the food processor!

ENJOY!
