16 oz. extra sharp cheddar chees, finely grated
1 3/4 cup flour
1 stick butter
1/4 tsp cayenne pepper (optional)

Allow cheese and butter to come to room temperature. Mix all ingredients well. Use a cookie press to form the shape you desire. Bake at 350º for 15 minutes until just starting to brown. Do not over bake.

We make these for Christmas as a quick snack. They can be reheated in a toaster oven. Most of the time we leave out the hot pepper. Other cheeses work too.
