10 C. Light cherries
2 tsp. Alum
4 T. Salt
7 C. Sugar
2 oz. Red food coloring
1 ½ tsp. Almond extract


Directions:
Directions:
Wash and pit “Royal Anne” or other firm light cherries.
Drain cherries before measuring. Save juice.
Dissolve Alum and salt in 8 cups of cold water.
Add cherries. Let stand 5-6 hours (if cherries float cover with plate, weighted down with jar filled with water).
Drain cherries and rinse with cold water.
Measure juice and add water to it to make 2 cups.
Add sugar.
Cook until sugar dissolves.
Add cherries.
Boil 2 minutes.
Remover from heat.
Add food color and extract.
Let stand 18-24 hours in a cool place.
Boil for 2 minutes.
Pour boiling hot into jars and seal.
