Zucchini Brownies Recipe

1/2 C vegetable oil
1 1/2 C white sugar
2 tsp vanilla
2 C all purpose flour
1/2 C unsweetened cocoa
1 1/2 tsp baking soda
1 tsp salt
2 C fine shredded zucchini
1/2 C chocolate Chips

Directions:
Directions:
Grease and flour a 9X13 pan. In a large bowl cream cusgar, vanilla, and oil together. In a separate bowl, sift flour, cocoa, baking soda, and salt. Add dry ingredients to sugar mixture. It will be dry. Fold in shredded zucchini and chocolate chips. Spread into prepared pan and bake. Done when top springs back when touched genlty.
350 degrees for 20-30 minutes

This is a recipe I got from Laurie Lashlee. She was one of my ASL students. Her best friend was a professional chef. They started brining food to class and this was one of my favorite. It is really moist and delicious. That was one of my favorite classes. I had amazing students. By the end of the class we were all bringing food. :-)
