Ingredients: adapted from vegan richa
- 1 chia egg (1 table spoon of chia + 3 table spoons water) - 1/4 cup of oil - 1/4 cup apple sauce - 1/4 cup sugar (granualted, coconut, raw) - 4 table spoons of molasses, maple syrup, or date syrup - 1 1/2 cups all purpose flour, gluten free flour, or whole wheat flour 1 tsp baking powder - 1/4 tsp baking soda -1/2 tsp sea salt - 1 tsp of cinnamon, ginger, nutmeg, and clove - 2 tsp grated ginger (about 2 thumbs worth) - 1/4 cup chopped crystalized ginger - optional sugar for coating

Directions:1) preheat oven to 350 F or 180 C
2) Make your chia egg by mixing 1 tablespoon of chia with 3 tablespoons water, set aside to allow to thicken
3) combine oil, applesauce, sugar, molasses, and set chia egg into a small bowl and stir until combined. It should be a medium thick paste like mixture
4) mix all dry ingredients into a large bowl, including crystalized ginger - this will help keep the pieces from sticking together too much
5) add the wet ingredients to the dry and stir until dough forms. It should be rather firm and not very sticky, it it is too dry add more oil or applesauce.
6) grease a baking sheet and form dough round disks as you would with peanut butter cookies. You may elect to use the fork pressing method as well
7) bake cookies for 12 minutes, rotating the baking sheet at 6 minutes (half way) remove promptly and allow to cool on the sheet. Best enjoyed with a hot apple cider! |

Notes: I found this recipe when searching for vegan christmas cookies, as I had a recent diet change up before the holiday one year. I was living in the UK and they are pretty big on ginger around the holidays outside of the typical ginger bread so I thought I would give these a go and I absolutely fell in love. I make them for any occasion if I can find the crystallized ginger (usually at a health foods store). If you can't mango pieces, walnuts, or craisins make excellent substitutes. I hope this recipe brings you as much joy as it has me because these make me positively delightful once I've baked and shared them.
