1 ½ # Dried navy beans
½ C. Packed brown sugar
4 Oz. Salt pork or cubed bacon
½ C. Maple syrup
½ C. Chopped onion
1 tsp. Salt
1 tsp. Dry mustard

Directions:
Directions:
Add 12 C. Water to navy beans and bring to a boil. Simmer 2 minutes.
Remove from heat, cover and let stand for one hour.
Bring beans and water to boil again and simmer for one hour. Drain and save liquid.
Add to beans: salt pork or cubed bacon, onion, brown sugar, maple syrup, salt and dried mustard and 1 ½ C. of liquid.
Put into 3 qt. casserole dish or bean pot.
Cover and stir occasionally while baking.

Baking: 300º
Time: 3 ½ - 4 hours
