4 slices French, Italian, or multigrain bread
1 red bell pepper
1 green bell pepper
1 onion
4 eggs
2 oz. cheese of your choice, crumbled or grated
Butter
Salt and pepper

Directions:
Directions:
1. Cut out the middle of each slice of bread, leaving a ring and keeping the middle in one piece.

2. Dice peppers and onion. Melt butter in a large pan over medium-low heat and add peppers and onion. Season with salt and pepper. Cook, stirring frequently, until tender and onions are clear (4-5 minutes).

3. Remove half of the cooked vegetables and divide remaining half into two small piles. Add more butter and place two bread rings around the vegetable piles, then spread out vegetables to fill the space.

4. Crack one egg into a bowl and stir. Pour into middle of one bread ring. Repeat with second egg and bread.

5. Cook until egg is partially set (3-5 minutes). Sprinkle ¼ of cheese over each egg, then replace the middle of each bread slice on top of the egg mixture.

6. Flip toasts and cook until second side is lightly browned.

7. Repeat steps 3-6 with remaining bread slices, vegetables, and eggs. Serve immediately.

This dish works for breakfast, lunch, or a light dinner. I like chevre (goat cheese), but you can also try it with Monterey Jack, Swiss, cheddar, or feta.

For more protein, add veggie "sausage" crumbles to the peppers and onions (meat eaters can substitute chopped ham).
