12 carrots, peeled and diced
butter
salt and pepper to taste
2 onions, chopped
2 T. butter
4 c. chicken stock
8 oz. brie cheese, cut into pieces
1 c. heavy cream
freshly ground coarse black pepper

Directions:
Directions:
Roast the carrots, butter, salt and pepper in a 425 F oven for 20 minutes. Meanwhile sauté the onions in 2 T. butter till tender. Heat the chicken stock. Add the onions and roasted carrots. Put into a food processor or blender and blend till smooth. Heat the pureed carrot mixture and add the brie. Stir till melted on low heat. Add the heavy cream and pepper. Season to taste.
