1 zucchini, peeled and chopped finely
1 onion, chopped finely
1 Tbsp minced garlic
1 tsp salt
1/2 c. oatmeal
3 dashes pepper
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried basil
1 lb ground beef
1 egg
1 tsp salt
¼ tsp pepper
1 can (12oz) tomato sauce

Directions:
Directions:
1. Spray skillet with cooking spray. Add zucchini, onion, garlic, salt, pepper, thyme, oregano, basil. Saute for 10 min on medium heat. Allow to cool to room temperature (can put in fridge to speed up).
2. In large bowl, mix ground beef, egg, oatmeal, salt, pepper, 1/2 of tomato sauce, and vegetable mixture.
3. Pat into 6 small meatloaves and place on foil lined baking sheet that has been sprayed with cooking spray.
4. Top each with the remaining tomato sauce.
5. Bake at 350 for 30 minutes.

NOTE: This meatloaf has a more italian-style sauce than a traditional sweet ketchup sauce. You can change the sauce topping by adding some ketchup if you prefer.
