4 bell peppers (4 if large, more if smaller)
1 lb sausage
1 can fire roasted tomatoes
1 Tbsp minced garlic
1 onion, chopped
1 c. instant brown rice
1/2 c. shredded cheddar cheese
1 Tbsp cumin
1 Tbsp paprika
1 tsp pepper
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp italian seasoning
Tabasco to taste

Directions:
Directions:
1. Cook rice according to package instructions.
2. Saute onion and garlic until tender. Add sausage and brown. Drain.
3. Heat a large pot of water to boiling. Cut peppers in half lengthwise and boil peppers for 3 minutes and remove.
4. Open can of tomatoes. Pour liquid from tomatoes into bottom of pyrex baking dish.
5. In a large mixing bowl, add tomatoes, sausage, onions/garlic, rice, and seasoning.
6. Fill each pepper with mixture. Sprinkle cheese on top.
7. Bake at 325 for 20 minutes.
