¼ cup olive oil
3 tablespoons wine vinegar
1 teaspoon sugar
½ teaspoon prepared mustard
Salt and freshly ground black pepper
1 pound bacon
1/3 cup sliced almonds
1 pound fresh spinach (stems discarded), torn into bite-size pieces
1 unpeeled red apple, cored and coarsely chopped
3 green onions, thinly sliced

Directions:

1.Combine first 4 ingredients with salt and pepper in a jar with a tight-fitting lid and shake well. Refrigerate until ready to use.
2.Cook bacon in large skillet over medium-high heat until browned and crisp. Drain well on a paper towel. Crumble and set aside.
3.Discard all but 1 tablespoon fat from the skillet. Add almonds to skillet and shake pan over medium-high heat until nuts are lightly toasted. Remove from heat.
4.Combine spinach with bacon, apple, onion and almonds and toss lightly.
5.Shake dressing, pour over salad and toss again. Makes 6 Servings
