1 # ground or finely chp. chicken/pork
1 tsp. EVOO
2 cloves minced garlic
1 small onion finely chp'd
1/4 cup hoisin
2 T. soy sauce
1 T. vinegar (any kind or use red or rice wine vinegar)
1 T. grated ginger
1 tsp. sriracha or Lavallee hot sauce
1- 8 oz. can diced water chestnuts- drained
1 head butter/Boston lettuce leaves- washed and drained.
2 gr. onions chp'd

SAUCE:
1 c. sugar
2 T minced garlic ( 6-8 Cloves)
1-3 tsp. garlic chili sauce
1 tsp. salt
1/2 c. vinegar( white or rice or wine)
1/2 c. water
1/2 cup chopped peanuts (or 1 T. peanut butter)

Make sauce first:
Chop peanuts and set aside. In saucepan; mix sugar, water, vinegar, salt and garlic and heat gently on low to medium heat for 10 minutes. Mix in chili sauce. Set aside to cool. Add peanuts to sauce and serve or refrigerate.

Heat oil in medium to large skillet. Add meat and cook until cooked through and crumbly. Stir in garlic and onions - cook for 1-2 minutes. Add liquids and ginger- cook 1 to 2 minutes. Add water chestnuts and cook for 1-2 minutes. Add green onion & S&P to taste. Keep warm.

On 1-2 large platters- cover with lettuce leaves. Spoon meat mixture over each leaf. Spoon sauce with peanuts over each. Serve immediately.

( You may serve these buffet style and let each person make their own wrap.

Ive added honey and/or mirin to sauce for part of sugar, and used all soy and no hoisin to meat and they are always good! We also like adding 4-8 oz. finely chopped mushrooms sautéed in with chestnuts. Can use Trader Joes Asian peanut dressing or sweet chili sauce instead of making the sauce.
