2 eggs scrambled a little
pinch of salt
flour, enough to make a VERY stiff dough
meat of choice, either mixed with spices or not OR ricotta cheese with some spices

Scramble the egg some then start beating in the flour, you will have to stop using the mixer at some point and just keep kneading in more flour until it I very stiff. Roll the dough out VERY thin. cut into two inch squares, add a little meat or ricotta. moisten edges and using a fork seal the edges. In boiling water cook until done.

Mom was a wiz at stretching things for meals. This was a way to stretch a little bit of burger for the whole family.
