3 lbs Maple Sausage, cooked loose
30 large flour tortillas
2 8 oz cream cheese room temperature
1 ½ sticks butter
1 large onion, chopped finely
1 ½ Bags Diced frozen hash brown potatoes
15 eggs
1/2 cup milk
Grated cheese (I like white American because it melts and blends well)

Directions:
Prepare sausage, chopped finely.
Melt one stick of butter in a pan and sauté onion until translucent.
Add diced potatoes to pan and cook thoroughly. This is the only time the potatoes are cooked so make sure they are cooked until soft. Remove from heat and place in bowl. Placed cream cheese on top while this mixture cools down.
Mix all eggs with milk, then cook in a pan with ½ stick of butter. You may need to add a little more butter. Cook eggs until just done - don't overcook.
Cream cheese should be soft now and ready to mix with potato and onion mixture. Mix well.

Using a small serving spoon, place the following onto each tortilla

1 heaping spoon of potato mixture
1 spoon sausage
¾ spoon of egg
sprinkle grated cheese on top.

Wrap each burrito individually in plastic wrap. Freeze in one layer in freezer. Once they are frozen you can pile them up.

TO SERVE: Place a couple in the refrigerator because they are best cooked when they are thawed. Place in microwave with plastic wrap on, for one minute. Unwrap and enjoy!

My family loves these. You can change them up by switching the meat, or adding veggies. Change the meat to hamburger and add pico de Gallo for a Mexican breakfast treat!
