The Cake

3/4 cup sifted coconut flour
3/4 cup granulated Swerve©
1/2 cup cocoa powder
2 tsp baking powder
6 eggs
2/3 cup heavy whipping cream
1/2 cup melted butter
Directions:
Directions:
Preheat oven to 350º

Grease two 8-inch round cake pans.
Add all of the cake ingredients to a bowl and mix well with electric mixer. Pour the batter evenly into the cake pans. Bake for 20-25 minutes or until the center springs back when touched.
Remove from the oven and let cool completely before icing.
 

The Icing

1 1/2 cups heavy whipping cream
1/4 cup plus 2 Tbsp powdered Swerve©
1 1/2 tsp vanilla extract
1/2 cup sifted cocoa powder

Whip the whipping cream to stiff peaks with an electric mixer. Add in the Swerve©, vanilla, and cocoa powder. Continue mixing until just combined. Frost the cake with the icing and serve.
