Peaches:
1/2 cup sugar
2 Tbsp Corn Starch
1 tsp cinnamon
2 cans unsweetened peaches with juice
1 tsp lemon juice

Cobbler:
1/2 stick butter
1 cup flour
1 Tbsp sugar
2 tsp baking powder
1/2 cup milk

Peaches:
Mix sugar, corn starch, & Cinnamon in a 2-qt sauce pan. Add peaches and lemon juice. Cook on Medium high stirring often until it thickens. Pour into ungreased 2-qt casserole dish.

Cobbler:
Mix dry ingredients. Cut in butter. Stir in milk. Drop by 6 spoonsful onto hot peaches. Bake at 400º for 25 - 30 minutes until cobbler is brown. Serve hot or cold

Good with ice cream.

All kinds of variations. Add other fruit such as blueberries. Double the cobbler if you prefer more to go with the peaches. I like lots of peaches. Vary the cinnamon to your taste. Use whole wheat flour (soft or white works best). Add Cinnamon to the cobbler. Use cloves or other spices.
