Chicken thighs or breasts cut in half
2 cups extra virgin olive oil
16 cloves garlic
2 cups lemon juice
1 Tbsp red wine vinegar
1 tsp oregano
3 Tbsp Italian parsley, minced

Directions:
Directions:
1. In a bowl, place one cup oil and about 8 cloves garlic. Let sit 2 to 3 hours.
2. Wash chicken parts, pat dry, and rub with salt and pepper. Let stand about 1 hour.
3. Dip each chicken piece in oil mixture. Put pieces in shallow baking pan and pour remainder of mixture over chicken. Cover with foil and refrigerate overnight.
4. Remove from refrigerator 1 hour before baking.
5. Bake at 350º for approximately 40 minutes. Remove foil and continue to bake until all pieces are deep golden brown and crisp.
6. While chicken is baking, heat in a saucepan the remaining cup of olive oil, 8 minced garlic cloves, lemon juice, vinegar, and oregano.
7. Once chicken is removed from the oven, place in serving dish and pour heated mixture over it. Let stand about 3 minutes.
