Let the potatoes simmer in the broth while you prep and cook the remaining ingredients. Because kielbasa is salty, no added salt is necessary.

*32 oz carton of either chicken, vegetable or beef broth plus 2 cups water ( may add bouillon cube if desired)
*1 bay leaf
*2 pounds red potatoes, no need to peel unless you want to just clean and remove large spots cut them into 3/4" cubes
*2 T unsalted butter
*1 pound kielbasa, cut into 1/2 inch rounds
*2 large leeks, white and light green parts only, cut in half lengthwise then sliced thin crosswise
*1/2 bunch kale, stems removed and leaves cut crosswise into 1/2 inch strips (about 4 C packed)
*pepper

1. Bring broth, potatoes and bay leaf to a boil in dutch oven( large soup pot) over medium high heat. Reduce heat to medium-low and simmer until potatoes are tender, about 10 min. Discard bay leaf. Using potato masher, coarsely break up potatoes, leaving some large chunks.
2. Meanwhile, melt butter in large skillet over medium heat. Cook leeks and add kielbasa stirring frequently, until lightly browned in spots and leeks are tender, about 4 minutes.
3. Add to potato mixture, stir and add kale simmer until kale is tender, about 3 minutes. Season with pepper and serve
This goes well with a nice bread for dipping.

I received this recipe in a Christmas card one year from my friend Kimberly who moved to Seattle so there was plenty of reason for her to make soup! I enjoy making this as it is easy, tasty and healthy with the kale. Great for a cold winter day. I've even been able to add kale grown from my own garden! Enjoy!
